Calories, Christmas and Peach Cobbler

CobblerYesterday I was mentally taken hostage by the thought of peach cobbler. I don’t know where it came from. Perhaps a subconscious view of one on a blog? Perhaps even reading some blogs posts about canning and preserving peaches. Whatever the case it was firmly planted in my brain – so much so that I actually emailed Pan to tell her of my (now) obsession. There was only one roadblock to my fruity infatuation though. For almost six weeks now I have been eating much differently than I have in the past and the notion of a sweet like peach cobbler just has no place in my daily intake.

The work day ended innocently enough and I thought that I had left my thoughts behind at my desk. But imagine my surprise when I got home to see that Pan had indeed whipped up a peach cobbler. My first thought was “Oh, Lord, not the temptation of this. I have been doing so well and have lost quite a bit of weight.” Then she told me that it was no ordinary cobbler. She had in fact made a more healthy version of the desert by following the recipe found here

Peach Cobbler – substituting whole wheat flour and splenda

Makes 8 servings

193 calories, 12.6 G fat, 2.8 g fiber

Ingredients

Directions

  1. Preheat oven to 350°F.
  2. Put the butter in a 9×13-inch Pyrex baking dish and put the dish in the preheating oven. While the butter is melting, mix up the batter by combining the flour, baking powder, salt, sugar and milk.
  3. When the butter is completely melted, remove the pan and pour the batter into the melted butter. Then, carefully spoon the peaches and juice evenly over the batter. Return dish to the oven and bake for 30 minutes.
  4. As the cobbler cooks, the batter will rise up and around the peaches. Makes 8 servings.

It was so tasty. I could hardly believe the substitutions that wee made were, in fact, made. I had a responsible portion (surprise, surprise) and don’t intend on having another piece. Craving, satisfied!

Oh, and the Christmas part? Yeah. While eating we realized that Christmas is not far off and we have several projects we need to cook, build, sew and otherwise pull together!
